Stuffed Tomatoes
Here is a really nice recipe we found that can be great to munch on when sipping down some nice cold ales.
12 medium-size fresh, ripe tomatoes
salt and pepper
12 oz. whole corn, drained
1 small chopped onion
8 ounces grated sharp cheddar cheese
3 cups soft bread crumbs
2 cups Stout
Cut the top off all the tomatoes, scoop the guts out and season inside with salt and pepper. Grab all the other ingredients in a bowl and mix them well, then place them inside the shells.
At this point you may need to consume the excess stout, meaning 3 pints. Put a little bit more stout on top of the tomato, then bake them in a fairly hot oven for around 20 mins. Done, eat and enjoy..
