Steak and Guinness Pie
I had an interesting email from someone recently commenting on our recipe last week on the beer batter, and asked if I could do some other tasty beer delight, well I found a nice recipe for an old classic, the steak and Guinness pie.
Ingredients:
2 lbs. stewing beef
1/2 cup beef stock
1 tbsp. tomato paste
1 large yellow onion
3 cloves garlicyour
Small handful of mixed herbs (rosemary, thyme and bay)
1 cup flour
Salt and ground black pepper
Pint of Guinness
14oz tin of tomatoes
1 egg
1 lb. frozen puff pastry, thawed
This is a fairly simple thing to make, but it can take some time so make sure you start making it well and truely before beer o’clock. Get everything apart from the egg and pastry and essentially cook it in a big pot and let it simmer for an hour or so till the meat is tender.
Now an important part of the recipe, you must grab a beer and sit down for a while.. When that is completed get a nice big pie tray and layer the bottom with some pastry (oil the bottom of the pie tray first), and dump all your nice steak, Guinness mixture on top of your pastry.
Place another layer of pastry on top and seal the edges, then put your fork through the top a few times to makes some holes, were nearly there.. Just mix an egg with a bit of water and coat the top of your pastry with, this will give it a brown look. Now shove it in a moderate oven for about 45 minutes and hey presto, you have a top meal. I say a good drink would have to be some more of the Irish taste sensation.
